Black Bean Chocolate Peanut Butter Cookies

Don’t be scared off by the black beans in this recipe – these are legitimately delicious cookies!  They contain no flour and no processed sugar, making them a healthier alternative to regular cookies.  The flour is replaced by beans which add fiber, protein and nutrients and you seriously don’t taste them at all!  They have rich chocolate peanut butter flavor and a soft fudgey texture.  These cookies are so good, no one will ever guess they’re healthy!  Oh yeah, they’re also gluten free and easier on your blood sugar than normal cookies – what’s not to love!

Black Bean Chocolate Peanut Butter Cookies

Yields 2 dozen cookies


  • 1 (15) oz can black beans, drained (pretty much any type of bean can be substituted for black beans, you can also substitute 1 1/2 cups of cooked beans for canned)
  • 2 Tablespoons oil
  • 1/4 cup cocoa powder
  • 1/4 teaspoon salt
  • 1/3 cup maple syrup or honey
  • 2 eggs
  • 1 teaspoon vanilla extract
  • ½ cup peanut butter
  • 1/2 cup chocolate chips
  • 1/3 cup peanuts, chopped (optional)


  • Preheat oven to 375°F. Line 2 cookie sheets with parchment paper (optional but makes clean up a breeze and prevents cookies from sticking).
  • Place beans, oil, cocoa, and salt in a food processor or blender and mix until smooth.
  • Add maple syrup/honey, eggs, vanilla and PB and blend on low until they’re thoroughly mixed.
  • Add the chocolate chips and optional nuts and pulse a few times to incorporate. Your dough will be pretty wet, kinda like thick pancake batter.  Don’t worry, this is normal.
  • Spoon the batter onto your cookie sheets. These cookies don’t spread, so aim for an even thickness to help them to bake evenly.
  • Bake for about 10 minutes until the cookies are set and the tops look dry.
  • Cool completely and enjoy!  These will only stay fresh for a couple days at room temperature, I recommend storing them in the fridge.


  • If you have a gluten sensitivity, make sure the peanut butter you use is gluten free.  Most natural peanut butters are, but occasionally an additive contains gluten so check the label.
