Coconut Cream Popsicles

In case you haven’t noticed, I’ve been on a serious popsicle kick lately.  It’s been an outrageously hot summer and nothing tastes better than a frozen treat on a hot day…  This pop is my take on Edy’s Whole Fruit Coconut popsicles and they’re even better than the original!  They’re dripping with rich, creamy coconut flavor and they’re a perfect poolside treat…  If you’re a coconut lover like me, you have got to try these – you will not be disappointed!

Coconut Cream Pops

Makes 4-6 popsicles (18 oz total)


  • 1 can coconut milk (13.5 oz)
  • ½ cup sweetened condensed milk
  • ¼ cup of coconut flakes
  • Optional: ½ teaspoon vanilla extract


  • Mix all of the ingredients in a large measuring cup (2-4 cup size)
  • Pour into molds, freeze and enjoy!


  • Texture – Coconut flakes enhance the coconut flavor in this recipe but are not strictly necessary.  I love these little bits of extra flavor and unexpected texture but some people are weirded out by flakes in their popsicles.  If you want your pops to have a smoother consistency, you could run the flakes through a food processor first or just omit them all together.
  • Extras – These pops taste great with chocolate chips, pineapple tidbits or other diced or pureed tropical fruits.
