BLT Salad – The Ultimate Summer Salad!

I don’t normally post salad recipes, but this was so darn good – I couldn’t resist!  It’s bursting with fresh flavor and is basically summer in a salad.  The first time I served it, Marshall took two bites and exclaimed, “this is the best salad you have ever made”.  This is a serious compliment because Marshall actually likes salad and we eat it quite often.  It’s fresh, delicious and surprisingly hearty.  It could almost be a meal unto itself, for sure if you added a little chicken or shrimp on top.  It would make an awesome addition to a summer barbeque or picnic – just make sure you bring copies of the recipe because people are gonna want it!

BLT Salad – the Ultimate Summer Salad!  Serves 4-6


  • 1 medium head lettuce, diced (I like Romaine, but use whatever you like)
  • 1-2 medium to large tomatoes, diced
  • 1 avocado, diced
  • ½ sweet onion, finely diced
  • 6 strips bacon, cooked and crumbled
  • Parmasean cheese to taste
  • ½ of a French baguette, diced into squares (see note below)
  • Dressing of choice (I recommend homemade Thousand Island:


  • Put your diced lettuce in a large bowl, I like it quite small like a chopped salad
  • Layer the diced tomatoes, onions, avocado and bacon on top
  • Finish with finely shredded hard cheese such as parmasean or romano and a generous handful of bread cubes (or croutons, see below).
  • Serve with a creamy dressing such as ranch, ceasar or thousand island and dig in!

Notes: Homemade dressing and croutons take this salad to the next level and are surprisingly easy to make:

  • You can make simple homemade croutons out of the baguette (or other crusty bread, or even regular sliced bread if that’s all you have).  I usually do them first so they bake while you’re prepping the other ingredients.   Cut the baguette in half lengthwise, drizzle each half generously with olive oil, salt and pepper and bake in a 350 degree oven until the top is crisp – usually about 7-10 minutes.  Then remove from oven, let it cool a bit and cut into squares.  Just beware, you’ll never want to eat boxed croutons again!
