Super Easy Peanut Butter Cookies

I had to share this recipe because it is so ridiculously easy – quite possibly the easiest cookies on earth.  They contain just 4 ingredients (all of which you probably already have) and they’re done in less than 20 minutes, including prepping and baking time!  They’re super simple and taste great making it a perfect recipe for teaching kids to cook.  It’s also handy when something comes up and you need dessert asap.  I was skeptical that a recipe without flour (that’s not a typo) could produce a true cookie, but I’ll be darned it did!  The lack of flour also makes the cookies gluten free which is an awesome side benefit if you’re gluten intolerant.  Hope you like them!

Super Easy Peanut Butter Cookies


  • 1 teaspoon baking soda
  • 1 cup sugar
  • 1 cup peanut butter (creamy or crunchy)
  • 1 egg


  • Mix the sugar and baking soda in a medium size bowl.
  • Add the peanut butter and mix until smooth.
  • Crack your egg in a small bowl and whip with a fork until the yolk is mixed with the white.
  • Add the egg to the peanut butter mixture and mix thoroughly.
  • Drop spoonfuls of dough onto a cookie sheet, flatten with a fork if you want.
  • Bake at 325 degrees for 10-13 minutes.
